SHRIMP CURRY BLACK PUFF

Shrimp Curry Black Puff

Bahan:
Puff Pastry:
·         275 gram         Tepung terigu (Bread flour)
·         25 gram           Actived charcoal
·         36 gram           Mentega (Butter)
·         170 ml             Air (Water)
·         Secukupnya     Garam (Salt)
·         150 gram         Pastry Margarine
Filling:
·         2 tbsp              Margarin
·         2 siung             Bawang putih (Garlic), cincang
·         4 siung             Bawang merah (Shallot), cincang
·         300 gram         Udang (Shrimp), cincang
·         2 tbsp              Bubuk Kari (Curry powder)
·         1 tsp                Bubuk cabe (Chili powder)
·         Secukupnya     Garam, Gula & Merica bubuk (Salt, sugar & pepper)
Topping:
·         200 gram         Mozarella
·         10 butir            Telur puyuh

Cara Membuat:
1.      Campur tepung, air, mentega, charcoal dan garam, uleni hingga kalis. Giling adonan hingga membentuk persegi, letakkan pastry margarine, lalu lipat dan giling kembali adonan (1x single, 2x double). Istirahatkan adonan dalam lemari pendingin selama 30 menit. Pipihkan adonan dan potong (10x10x4) dan letakkan dalam loyang muffin.
2.      Filling: Panaskan margarin, tumis bawang putih dan bawang merah hingga harum, tambahkan udang, bumbu kare, cabe bubuk, gula, garam dan merica, masak hingga matang, angkat.
3.     Letakkan isi dalam adonan puff, lalu tambahkan mozzarella dan telur puyuh, panggang selama ± 30 menit hingga matang, angkat.
