CRISPY DORI IN PUFF WITH SALAD

Crispy Dori In Puff with Salad

Bahan:
Puff Pastry:
·         500 gram         Tepung terigu (Bread flour)
·         60 gram           Mentega (Butter)
·         285 ml             Air (Water)
·         Secukupnya     Garam (Salt)
·         250 gram         Pastry Margarine
Filling:
Salad:
·         5 lembar          Selada Keriting (Curly lettuce)
·         2 buah             Tomat (Tomato)
·         1 buah             Nanas (Pineapple)
·         1 buah             Beetroot
·         1 buah             Wortel (Carrot)
·         Secukupnya     Garam & Merica bubuk
Saute Mushroom:
·         1 tbsp              Minyak Goreng (Cooking oil)
·         1 siung             Bawang putih (Garlic), cincang
·         100 gram         Jamur Kancing segar (Button Mushroom)
·         Secukupnya     Garam & Merica bubuk
Crispy Dori:
·         500 gram         Ikan Dori fillet, potong-potong
·         150 gram         Tepung terigu (Medium flour)
·         300 gram         Tepung roti (Bread crumb)
·         2 butir              Telur ayam (Egg), kocok
·         Secukupnya     Garam & Merica bubuk
·         Secukupnya     Minyak goreng (Cooking oil)
Thousand Island:
·         300 gram Mayonaise
·         30 gram Bawang Bombay (Onion)
·         15 gram Paprika merah (Red Bellpepper)
·         15 gram Paprika hijau (Green Bellpepper)
·         100 ml Saus tomat (Tomato sauce)
·         Secukupnya Tobasco
·         Secukupnya Sirup gula

Cara Membuat:
1.    Campur tepung, air, mentega, dan garam, uleni hingga kalis. Giling adonan hingga membentuk persegi, letakkan pastry margarine, lalu lipat dan giling kembali adonan (1x single, 2x double). Istirahatkan adonan dalam lemari pendingin selama 30 menit. Pipihkan adonan dan bentuk bulat dengan lubang ditengah. Olesi atasnya dengan kuning dan panggang selama ± 30 menit hingga matang.
2.  Saute mushroom: Panaskan minyak, tumis semua bahan hingga harum, angkat.
3.      Bumbui ikan dori dengan garam dan merica, lalu lumuri dengan tepung, celupkan dalam telur kocok dan lumuri kembali dalam tepung roti. Goreng hingga matang, angkat.
4.      Thousand Island: Campur semua bahan, aduk rata.
5. Susun puff, tambahkan sauté mushroom, thousand island, salad dan crispy dori diatasnya.
6.      Sajikan.
